Our Main Street restaurant has no make-up air unit at all. Can one be added to an old building?
Usually yes, though the route matters. Options include a rooftop make-up air unit ducted to the hood area, a wall-mounted unit where there is an exterior wall near the kitchen, or in some cases a transfer path from a conditioned space. Older buildings often need a structural look at the roof, a penetration plan that respects the parapet and any shared wall, and a permit. Interlocking it to run with the hood fans is the key detail so the balance holds whenever the kitchen is cooking.
Why does our Ventura Harbor kitchen exhaust fan need belts and bearings replaced so often?
Salt spray. Harbor-side fans sit in air that is wetter and saltier than almost anywhere else in the city, and belts glaze, bearings corrode and motor housings rust from the outside in. Switching to a direct-drive fan where the duty allows, specifying sealed bearings and a coated or stainless housing, and rinsing the exterior on a schedule all extend life. If the housing or curb is perforated, replacement with a corrosion-rated unit is the better long-term answer.
Do you clean hoods and ducts?
No. Hood and duct cleaning is a separate specialty. We handle the mechanical side: exhaust fans, make-up air, and HVAC balance.
Why is my dining room hot when the kitchen is running?
Often the make-up air is not matched to the exhaust, so the kitchen pulls conditioned air from the dining room. Measuring airflow and pressure shows where the balance is off.
